This depends on why you have an Individual Tax Identification Number and not a Social Security Number.

The biggest concern for most insurers will be how much time you spend outside of the United States and where you go when you leave the United States.  All insurers keep a list of countries that they deem unsafe and will not issue a policy if that is your country of citizenship.

There are a handful of companies that will issue life insurance with an ITIN on the application. You may need to fill out a foreign travel questionnaire and/or provide the reason that you do not have a Social Security Number in order to be approved for the life insurance policy.
